Easy & Heathy Avocado Salad

Super quick lunch for one that loaded with flavor, healthy proteins and fats.  Eat with gluten-free crackers or serve over a bed of lettuce.


  • 1/2 avocado, pitted and peeled
  • 2 hard boiled eggs
  • 1 TBSP red onion, diced
  • 1 TSP dijon mustard
  • fresh dill
  • splash of white balsamic or apple cider vinegar
  • garlic powder, to taste
  • sea salt & pepper, to taste


  1. Add all the ingredients to a mixing bowl and stir to combine.
