30-Minute Instant Pot Red Lentil Soup

An easy, 30-minute meals that is perfect for anytime of the year and loaded with nutritional goodness!


  • 2 tbsp olive oil
  • 1/2 cup chopped onion
  • 3 cloves garlic
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1/2 cup diced celery
  • 3/4 cup diced carrot
  • 1 1/2 cups red lentils
  • 1/3 cup tomato sauce
  • 1 cup water
  • 4 cups organic vegetable stock
  • chopped parsley for garnishing


  1. Pick through lentils and quickly rinse under cold water, and set aside.
  2. Press the “saute” button on your Instant pot and add olive oil, carrots, celery, onion, and garlic.  Sauté the mixture for 8-10 minutes, or until the carrots are soft.
  3. Add the tomato paste, salt/pepper, cumin, turmeric, lentils, vegetable broth, and water and give it a good stir.  Pressure cook for 10 minutes and then allow the pressure to naturally release for another 10 minutes.
  4. Give the soup a good stir, salt to taste if needed, and then add fresh parsley.
