An easy, 30-minute meals that is perfect for anytime of the year and loaded with nutritional goodness!
Ingredients
- 2 tbsp olive oil
- 1/2 cup chopped onion
- 3 cloves garlic
- 1 tsp cumin
- 1 tsp turmeric
- 1/2 cup diced celery
- 3/4 cup diced carrot
- 1 1/2 cups red lentils
- 1/3 cup tomato sauce
- 1 cup water
- 4 cups organic vegetable stock
- chopped parsley for garnishing
Instructions
- Pick through lentils and quickly rinse under cold water, and set aside.
- Press the “saute” button on your Instant pot and add olive oil, carrots, celery, onion, and garlic. Sauté the mixture for 8-10 minutes, or until the carrots are soft.
- Add the tomato paste, salt/pepper, cumin, turmeric, lentils, vegetable broth, and water and give it a good stir. Pressure cook for 10 minutes and then allow the pressure to naturally release for another 10 minutes.
- Give the soup a good stir, salt to taste if needed, and then add fresh parsley.
